Preheat your grill to medium high heat, 400°F. Clean the grates.
Slice the baguettes in half length wise and brush with olive oil. Once the grill is up to heat, grill the bread on both sides until nice grill marks appear, about 3-5 minutes per side.
While the bread is grilling, smash the avocados with a fork or potato masher in a large bowl along with the juice from both lemons and a large pinch of salt and pepper.
Remove the grilled bread from the grill and slather with the avocado mixture. Sprinkle with the chili flakes, using as much or as little as you like.
Next, using a boxer grater, grate the hard boiled eggs into a separate bowl or plate. Sprinkle the grated eggs on top of the baguettes and finish with gently torn watercress.
Serve the boats whole and slice as needed.
