Banana-Nut Granola

Banana-Nut Granola


  • 3 cups rolled oats, gluten free
  • ¾ cups walnuts, roughly chopped
  • ¾ cup pecans, roughly chopped
  • 1 ½ tbsp. brown flax seeds
  • 1 large ripe banana
  • ¼ cup coconut oil, melted
  • 1 tsp. vanilla extract
  • ¼ cup honey
  • ½ tsp. fine sea salt
  • 1 ½ tsp. ground cinnamon
  • 1/8 tsp. freshly grated nutmeg


  1. Preheat your oven to 350F. Prepare 1 large or 2 medium baking sheets with parchment or a silicone baking mat.

  2. In a bowl combine the oats, chopped walnuts, pecans and flax seeds.

  3. In a separate bowl combine the banana, coconut oil, vanilla, honey, sea salt, cinnamon and nutmeg. Mix together, mashing the banana and fully incorporating everything.

    Pour the wet mixture over the oats and nuts. Stir to combine.

  4. Pour mixture onto the prepared baking sheet/s. Place in the preheated oven and bake for 25-30 minutes. Toss half way through. Bake until golden brown. 

  5. Remove from oven and let cool fully then store in an airtight container.
