Matcha and Coconut Milk Chia Seed Pudding

Ingredients

  • 2 cups coconut milk beverage, unsweetened
  • 1/2 cup chia seeds
  • 2 tbsp. honey, agave or maple syrup
  • 1 tsp. vanilla extract
  • 1 tsp. matcha green tea powder
  • Pinch of sea salt
  • Strawberries, washed and sliced

Directions

  1. In a bowl combine all of the ingredients, minus the strawberries, and mix with a whisk. Let sit for 5 minutes and whisk again.

    Cover and refrigerate overnight.

  2. Whisk before serving, adding a little extra coconut milk beverage if it looks too thick.

  3. Portion out your desired amount and top with the sliced strawberries. Will keep refrigerated for 4-5 days.
