French Toast with Maple and Walnuts

Ingredients

  • 10-12 slices sourdough bread, day old
  • 4 eggs
  • ½ cup heavy cream
  • 1 tsp. vanilla extract
  • 1 tbsp. granulated sugar
  • ½ tsp. cinnamon
  • pinch of salt
  • Unsalted butter, for greasing the pan
  • 1 cup pure maple syrup
  • ½ cup toasted walnuts, roughly chopped

Directions

  1. In a bowl whisk together the eggs, cream, vanilla, sugar, cinnamon and salt. Start soaking the bread slices, a couple at a time, in the mixture for about 1 minute.

  2. Bring a medium sized non-stick skillet up to medium-low heat. Add a little butter to the pan. Place 1 to 2 slices of the soaked bread, depending on the size of your skillet, into the pan and cook for 3-4 minutes per side or until golden and slightly crispy.

  3. Remove from pan and continue with remaining slices keeping the cooked slices warm on a sheet tray in a very low temperature oven.

  4. Serve with toasted walnuts and a drizzle of maple syrup.
