In a high power food processor or blender combine the beans, tahini paste, miso paste, garlic, lemon juice and cumin. Blend on high until the mixture starts to come together.
With the machine on low, slowly add the cold water 1 tablespoon at a time until the mixture looks creamy, but not too loose.
Taste for seasoning, adding salt and pepper as needed.
To serve spoon into a shallow bowl and drizzle with a little olive oil, a sprinkle of black pepper and chives.
