Pumpkin Chocolate Chip Cookies
Ingredients
- 1 cup canned pumpkin
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 1 egg
- 2 cups AP flour
- 2 tsp. baking powder
- 2 tsp. cinnamon
- 1/2 tsp. ground nutmeg
- 1/2 tsp. ground ginger
- 1/4 tsp. ground cloves
- 1/2 tsp. fine sea salt
- 1 tsp. baking soda
- 1 tsp. milk
- 1 tbsp. vanilla extract
- 2 cups dark or semisweet chocolate chips
Directions
Preheat oven to 350° F. Line a cookie sheet with parchment or a silicone baking mat.
In a standmixer fitted with a paddle attachment, mix together the pumpkin, sugar, vegetable oil and egg.
In a small bowl combine the dry ingredients. Flour, baking powder, cinnamon, nutmeg, ginger, cloves and salt.
In another small bowl mix together the milk and baking soda.
Add the milk mixture along with the vanilla to the pumpkin mixture in the standmixer. Mix to combine. Add the all of the dry ingredients and mix until you can no longer see any flour, but don't over work the batter.
By hand, mix in the chocolate chips with a wooden spoon.
Using an ice cream scoop or a large spoon, drop the cookies on to the prepared cookie sheet and bake for 9-11 minutes or until puffed and set.
Remove and cool on a baking rack.
