Watermelon Margarita Granita

Ingredients
- 1/4 cup light brown sugar, packed
- 1/4 cup water
- 1/2 small watermelon
- 3/4 - 1 cup silver tequila
- 1/4 cup orange liqueur
- 2 limes, juiced
Directions
- In a small sauce pot combine the brown sugar and water*. Bring to simmer to dissolve the sugar and then remove from heat and let cool. - *To make these spicy, add a chopped jalapeno at this point and then strain it out once it cools. 
- Cut up the watermelon into 1-2 inch cubes. Discard the rind. 
- In a blender combine the cubed watermelon, tequila, orange liqueur, lime juice and half of the cooled brown sugar simple syrup. - Blend until smooth. Taste and add more simple syrup if it isn't sweet enough. Blend again if needed. 
- Pour the mixture into a 9x9 rectangle or oval baking dish. Place in the freezer for 2-3 hours. Remove and using a fork, scrape the mixture up. Place back in the freezer overnight to fully firm up. - To serve, scrape again with a fork and place into small bowls or cups. Garnish with extra lime wedges. - Recipe Courtesy of Megan Mitchell
