Matcha and Coconut Milk Chia Seed Pudding
Ingredients
- 2 cups coconut milk beverage, unsweetened
- 1/2 cup chia seeds
- 2 tbsp. honey, agave or maple syrup
- 1 tsp. vanilla extract
- 1 tsp. matcha green tea powder
- Pinch of sea salt
- Strawberries, washed and sliced
Directions
- In a bowl combine all of the ingredients, minus the strawberries, and mix with a whisk. Let sit for 5 minutes and whisk again. - Cover and refrigerate overnight. 
- Whisk before serving, adding a little extra coconut milk beverage if it looks too thick. 
- Portion out your desired amount and top with the sliced strawberries. Will keep refrigerated for 4-5 days. - Recipe Courtesy of Megan Mitchell
