Green Turkey Chili

Green Turkey Chili

Ingredients

  • 5-6 green onions, roughly chopped⁣⁣
  • 2 garlic cloves ⁣⁣
  • 1 poblano, stem and seeds removed, roughly chopped ⁣⁣
  • 1 jalapeño, roughly chopped ⁣⁣
  • EVOO, for drizzling ⁣⁣
  • 1 pound dark meat ground turkey ⁣⁣
  • kosher salt, to taste⁣⁣
  • freshly cracked black pepper, to taste⁣⁣
  • 4 cups low sodium chicken stock ⁣⁣
  • three 4-ounce cans mild, diced green chiles ⁣⁣
  • two 15-ounce cans cannellini beans, drained and rinsed ⁣⁣
  • 2 tbsp. cumin⁣⁣
  • 1 lime⁣⁣
  • sliced avocado, for serving⁣⁣
  • crumbled cheese, for serving⁣⁣
  • tortilla chips, for serving ⁣⁣

Directions

  1. To a food processor add the green onions, garlic, poblano and jalapeño. Blitz until a chunky paste forms ⁣.

  2. Bring a medium Dutch oven or stockpot up to heat over medium. Drizzle in EVOO then add in the veggie paste. Cook for 3-4 minutes or until fragrant and most of the liquid has absorbed.

  3. Add in the ground turkey and cook for 5-6 minutes⁣⁣. Season with salt and pepper then add in the stock, green chiles, beans and cumin⁣.

  4. Stir, bring to a simmer then place the lid half on half off and cook for 45-60 minutes stirring occasionally. ⁣⁣

  5. Once it’s to your desired thickness add in the lime juice and taste for seasoning, adding more salt or pepper if needed. Ladle into bowls and top with avocado, cheese and crumbled tortilla chips.
