Miso White Bean Hummus

Ingredients
- 2 15-ounce cans cannellini beans, drained and rinsed
- 1/4 cup tahini paste
- 1/4 cup light yellow miso paste
- 2 garlic cloves
- 1 small lemon
- 1/2 tsp. cumin
- 1/4 cup cold water
- Salt and pepper, to taste
- Olive oil, for drizzling
- Chives, for garnish
- Pita, breadsticks or chips, for dipping
- Various veggies, for dipping
Directions
- In a high power food processor or blender combine the beans, tahini paste, miso paste, garlic, lemon juice and cumin. Blend on high until the mixture starts to come together. 
- With the machine on low, slowly add the cold water 1 tablespoon at a time until the mixture looks creamy, but not too loose. 
- Taste for seasoning, adding salt and pepper as needed. 
- To serve spoon into a shallow bowl and drizzle with a little olive oil, a sprinkle of black pepper and chives. - Recipe Courtesy of Megan Mitchell
