No Bake Oatmeal Energy Bites

No Bake Oatmeal Energy Bites


  • 1 1/2 cups gluten-free rolled oats
  • 1/2 cup nut butter (peanut, cashew or almond)
  • 1/4 cup raw honey
  • 1/4 cup chopped dates
  • 1/4 cup dried blueberries, cranberries, raisins or cherries
  • 1 tbsp. chia seeds
  • 1 tbsp. flax seeds
  • 1/4 tsp. cinnamon
  • Pinch of salt


  1. To a medium bowl add the oats, nut butter, honey, dates, dried fruit, chia seeds, flax seeds, cinnamon and salt. Mix together, breaking up the dates, until evenly combined.

  2. Using a 1 tbsp. measure, scoop out rounded spoonfuls of the mixture and roll in your hands to form a ball. Compress as needed so it stays together. Place on a sheet tray or plate and continue with remaining mixture. Makes 16 bites.

  3. Place in the fride to firm up then keep in an airtight container, in the fridge, for 7-10 days. Enjoy as needed.
