To a medium bowl add the oats, nut butter, honey, dates, dried fruit, chia seeds, flax seeds, cinnamon and salt. Mix together, breaking up the dates, until evenly combined.
Using a 1 tbsp. measure, scoop out rounded spoonfuls of the mixture and roll in your hands to form a ball. Compress as needed so it stays together. Place on a sheet tray or plate and continue with remaining mixture. Makes 16 bites.
Place in the fride to firm up then keep in an airtight container, in the fridge, for 7-10 days. Enjoy as needed.
