Spicy Cashew Butter Dressing
Ingredients
- 1/2 cup creamy cashew butter
- 1/2 cup packed cilantro leaves and stems
- 1/4 cup rice wine vinegar
- 2 tbsp. coconut aminos
- 2 tbsp. water
- 1 tsp. toasted sesame oil
- 1/2 tsp. red chili flakes
- 1/2 tsp. kosher salt
- 1 garlic clove
Directions
To a high power blender, such as a Vitamix, add everything and blend on high for 30 seconds.
Taste for seasoning. If it looks too thick add 1-2 more tbsp. of water.
Will keep in an airtight jar in the fridge for 5-7 days.
