Overnight Lactation Grains

Ingredients
- 6 large Medjool dates, pitted and roughly chopped
- 1 1/2 cups steel cut oats
- 1/2 cup whole grain millet
- 1/2 cup roughly chopped pecans, toasted
- 1/2 cup roughly chopped walnuts, toasted
- 1/4 cup chia seeds
- 1/2 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1/2 tsp. ground cardamom
- 1/2 tsp. fine sea salt
- 4 - 4 1/2 cups unsweetened almond/cashew/oat milk
- 1/4 - 1/3 cup maple syrup (1/3 cup if you like it sweeter)
- 2 tsp. vanilla extract
Directions
- In a large bowl combine the dates, oats, millet, pecans, walnuts, chia seeds, cinnamon, ginger, cardamom and salt. Mix together.
- In a large liquid measuring cup or bowl whisk together 4 cups of the nondairy milk, maple syrup and vanilla. Pour over the oat mixture and stir to evenly combine, breaking up the dates into small pieces. - Let sit for 10 minutes then stir again to make sure everything is evenly distributed.
- Cover and place in the fridge overnight.
- When ready to serve, stir together adding more nondairy milk if too thick. Top with blueberries, a scoop of yogurt, a drizzle of honey or maple or on its own.
- Will keep in an airtight container, in the fridge, for 3-5 days. - Recipe Courtesy of Megan Mitchell
