Preheat oven to 400°F.
Lightly dust your counter or a large cutting board with flour. Using a rolling pin, roll out the dough into a rectangle about the size of a half sheet tray, 13x18.
In a large bowl combine the chopped spinach, shredded mozzarella and garlic. Toss to combine.
Evenly sprinkle the mixture over the rolled out pizza dough leaving about a 1-inch boarder all the way around. Dot the mixture with the ricotta cheese and sprinkle with salt and pepper.
Next roll up the pizza on top of itself starting on the short end rolling up to the other short end. Tuck any spinach or cheese back into the roll that may have fallen out.
Dust a sheet tray with a little flour and place the rolled pizza on it, seam side down. Drizzle with olive oil, and bake for 25-30 minutes or until golden brown and puffed.
Remove from oven and let cool slightly the slice into rounds and serve with marinara sauce.
