French Toast with Maple and Walnuts
Ingredients
- 10-12 slices sourdough bread, day old
- 4 eggs
- ½ cup heavy cream
- 1 tsp. vanilla extract
- 1 tbsp. granulated sugar
- ½ tsp. cinnamon
- pinch of salt
- Unsalted butter, for greasing the pan
- 1 cup pure maple syrup
- ½ cup toasted walnuts, roughly chopped
Directions
In a bowl whisk together the eggs, cream, vanilla, sugar, cinnamon and salt. Start soaking the bread slices, a couple at a time, in the mixture for about 1 minute.
Bring a medium sized non-stick skillet up to medium-low heat. Add a little butter to the pan. Place 1 to 2 slices of the soaked bread, depending on the size of your skillet, into the pan and cook for 3-4 minutes per side or until golden and slightly crispy.
Remove from pan and continue with remaining slices keeping the cooked slices warm on a sheet tray in a very low temperature oven.
Serve with toasted walnuts and a drizzle of maple syrup.
