To a small sauce pot add the water, sugar and mint. Bring up to a simmer over medium heat then remove from heat and let steep until cool, about 20 minutes.
Strain into a glass jar or liquid measuring cup.
To a cocktail shaker add 1 ounce of mint simple syrup and 2 sprigs of mint, muddle for 10 seconds. Next add in the bourbon, Pure Leaf Unsweetened Green Tea and 1/4 cup ice. Shake for 20 seconds then strain into a short glass or mint julep glass filled with crushed ice. Garnish with a mint sprig.
