Gin Soaked Cherry Crostata
Ingredients
- FOR THE CRUST:
- 1/2 cup sliced almonds, raw
- 1 cup AP flour, plus more for rolling
- 1 tbsp. granulated sugar
- 1/2 tsp. cinnamon
- Pinch of fine sea salt
- 1/2 cup unsalted butter, cold and cut into small cubes
- 3 tbsp. ice water
- FOR THE FILLING:
- 1 small lemon, zest and juice
- 3 cups cherries, halved and pitted
- 1/4 cup brown sugar
- 2 tbsp. cornstarch
- 2 tbsp. gin
- 1 tbsp. milk, for brushing crust
- Large crystal sugar, for sprinkling
Directions
In a food processor grind the almonds into a fine meal. Next add in the flour, sugar, cinnamon and salt and pulse a few times to combine. Add in the cubed butter and pulse 8-10 times until the butter is incorporated and no large chunks remain.
Lastly add in the ice water one tbsp. at a time. Pulse just until the mixture comes together and starts to form a ball, about 1 minute.
Pour out onto the counter and form into a flat disk. Wrap in plastic wrap and refrigerate for at least 1 hour.
Preheat oven to 375F.
In a medium sized bowl combine the lemon zest and juice, pitted cherries, brown sugar, cornstarch and gin. Stir to combine.
On a lightly floured surface, roll the dough out to a 14-inch round. It’s ok if the edges crack a little. Using the rolling pin gently roll the dough onto itself and transfer it to a large, parchment lined baking sheet. Flatten back out to a round.
Using a slotted spoon scoop the cherries into the middle of the dough, mounding them up in the middle and leaving about a 2-inch border. Next fold the dough over the edges overlapping a little.
Pour the remaining liquid from the bowl over the cherries.
Using a pastry brush, brush the edges with a little milk and sprinkle liberally with the sugar crystals.
Bake for 45-50 minutes or until the edges are golden brown and the cherries begin to bubble. Remove and let cool slightly. Serve with whipped cream or ice cream.
