Banana-Nut Granola

Banana-Nut Granola

Ingredients

  • 3 cups rolled oats, gluten free
  • 3/4 cups walnuts, roughly chopped
  • 3/4 cup pecans, roughly chopped
  • 1 1/2 tbsp. brown flax seeds
  • 1 large ripe banana
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey
  • 1 1/2 tsp. ground cinnamon
  • 1 tsp. vanilla extract
  • 1/2 tsp. fine sea salt
  • 1/8 tsp. freshly grated nutmeg

Directions

  1. Preheat your oven to 350F. Prepare 1 large or 2 medium baking sheets with parchment or a silicone baking mat.

  2. In a bowl combine the oats, chopped walnuts, pecans and flax seeds.

  3. In a separate bowl combine the banana, coconut oil, honey, cinnamon, vanilla, sea salt and nutmeg. Mix together, mashing the banana and fully incorporating everything.

    Pour the wet mixture over the oats and nuts. Stir to combine.

  4. Pour mixture onto the prepared baking sheet/s. Place in the preheated oven and bake for 25-30 minutes or until golden brown. Toss half way through. 

  5. Remove from oven and let cool fully then store in an airtight container for up to 2 weeks.
