Watermelon Margarita Granita

Watermelon Margarita Granita

Ingredients

  • 1/4 cup light brown sugar, packed
  • 1/4 cup water
  • 1/2 small watermelon
  • 3/4 - 1 cup silver tequila
  • 1/4 cup orange liqueur
  • 2 limes, juiced

Directions

  1. In a small sauce pot combine the brown sugar and water*. Bring to simmer to dissolve the sugar and then remove from heat and let cool.

    *To make these spicy, add a chopped jalapeno at this point and then strain it out once it cools. 

  2. Cut up the watermelon into 1-2 inch cubes. Discard the rind.

  3. In a blender combine the cubed watermelon, tequila, orange liqueur, lime juice and half of the cooled brown sugar simple syrup. 

    Blend until smooth. Taste and add more simple syrup if it isn't sweet enough. Blend again if needed.

  4. Pour the mixture into a 9x9 rectangle or oval baking dish. Place in the freezer for 2-3 hours. Remove and using a fork, scrape the mixture up. Place back in the freezer overnight to fully firm up.

    To serve, scrape again with a fork and place into small bowls or cups. Garnish with extra lime wedges.
