Chicken Salad with Apples, Grapes and Walnuts

Chicken Salad with Apples, Grapes and Walnuts

Ingredients

  • 1 rotisserie chicken
  • 2-3 green onions, thinly sliced
  • 1 small green apple, 1/2-inch dice
  • 2 cups green grapes, halved
  • 3/4 cup walnut halves and pieces, toasted
  • FOR THE DRESSING:
  • 1 lemon, juiced
  • 3/4 cup mayonnaise*
  • 3 tbsp. dijon*
  • Kosher salt, to taste
  • Freshly cracked black pepper, to taste

Directions

  1. Begin by shredding the chicken into medium sized chunks with your hands or 2 forks. Place into a large bowl. 

  2. To the bowl add in the green onions, diced apple, grapes and walnuts. 

  3. In a small bowl combine the lemon juice, mayo, dijon and a pinch of salt and pepper. Whisk together then pour over the chicken mixture and stir to combine.

    Taste for seasoning adding more salt and pepper if needed.

  4. Serve with chips, on top of greens or on a sandwich with watercress and sharp cheddar cheese.
